like below fixes the issue You have some options here.
Method expression f:setPropertyActionListener f:atribute f:param
code :
<p:menuitem value="ADD" action="#{a.myAction}">
    <f:setPropertyActionListener target="#{a.a1}" value="myValue" />
    <f:setPropertyActionListener target="#{a.a2}" value="myValue2" />
</p:menuitem>
public String myAction() {
  //String value = this.a1;
  //String value2 = this.a2;
  //You have to return the viewId for the navigation, or null
}
public void myAction() {
  //String value = this.a1;
  //String value2 = this.a2;
}

I wish this help you Look at here for your startup.
But you can get your session with a java scriplet which will be against the ICEfaces conventions. so you don't need to access any session as long as you have access to all your bean data through your ICEfaces tags in the xhtml file.

I think the issue was by ths following , You should try Dialog Framework from Primefaces. It loads the content from an xhtml page in a dialog from the backing bean. Here are 2 links from primefaces showcase that will help you get started:
Basic - https://www.primefaces.org/showcase/ui/df/basic.xhtml

To fix the issue you can do In this post i will try to answer about your question (even if it's not very clear for me)
in your category entity you will make the list of product that you will work with it will look like this
code :
@Entity
@EntityListeners(QuerySessionLog.class)
@Table(name = "category")

....
@OneToMany(mappedBy = "category",  fetch = FetchType.LAZY , cascade = CascadeType.ALL ,orphanRemoval = true)
private List<productEntity> listProducts ;
...
@JoinColumn(name = "category")
@ManyToOne(fetch = FetchType.LAZY)
private categoryEntity category;
